On May 20, 2014, the Organic Food Development Center (OFDC) of the Ministry of Environmental Protection jointly held the "OFDC Organic Food Standards Seminar" in Beijing. Seminar invited from ministry of environmental protection ecological division, national certification and accreditation supervision and administration commission of registration department, conformity assessment in China national approval committee, China certification and accreditation association, China organic product certification working group, yangzhou university, cooking and nutrition education experts, domestic organic food leading companies of the parties and representatives of experts, research on OFDC organic food certification standards set by the carried on the thorough discussion.
At the conference, experts urged the industry to adopt advanced disinfection techniques to ensure the hygiene, health and environmental protection of organic restaurants. It is understood that dynamic air disinfection technology will play a very important role in the development of organic catering due to its environmental protection, man-machine operation, harmless to human health and other characteristics.
Food is an eternal topic in human society. From "eating with raw hair and drinking blood" to roasting cooked food, from providing food for life to providing adequate food and clothing, from enjoying delicacies to savoring food culture, all of these have not shaken the eternal law that "food is the first choice of the people".
With the development and maturity of China's organic agriculture and organic food processing industry, organic catering has gradually become a new thing in China's organic industry and attracted more and more consumers' attention. Choosing organic diet has gradually become an irreversible trend for people to pursue a healthy life. At present, some domestic catering enterprises have injected "organic" elements into their catering services, launched organic dishes, or even directly labeled with the name of organic restaurants, advocated the concept of healthy diet, and provided organic food for consumers.
However, at present, the Chinese government has not carried out legislation on organic catering, and the organic propaganda in the catering industry is actually lack of supervision, which makes it difficult to tell the true from the false. Therefore, the launch of organic food standards in the catering industry and the independent certification by a third party will help improve the standardization of the organic food industry, ensure that consumers can identify and buy real organic food products, and at the same time improve the reputation of truly responsible catering enterprises.
Developed countries in Europe have formulated corresponding organic food standards and certification system in the field of organic food, and actively promoted the implementation, promoting the development of the local organic industry. Compared with the same industry abroad, China's organic catering industry is still in the initial stage of exploration, and the development of organic catering standards and organic catering certification system in China is still a blank stage, unable to meet the needs of catering enterprises and consumers for organic catering.
For many years, the Organic Food Development Center of the Ministry of Environmental Protection has been actively researching the development of foreign organic food standards and certification systems. Since 2013, the center has been working with Nanjing Guohuan Organic Product Certification Center to establish a research team based on the characteristics and needs of the development of China's organic industry, actively trying to develop China's first organic food standard, and to study the organic food certification system. At present, the CENTER has drawn up the OFDC Organic Catering Standards (Draft).
Once China's first organic catering standard is implemented, it will effectively regulate the operation of organic catering and promote the healthy development of China's organic catering industry.
OFDC Organic Catering Standards (Draft) has special provisions on the disinfection of organic catering food and its raw materials. The specific provisions are as follows
6. Cleaning and disinfection (including pest control)
6.1 The presence of unsealed organic products should not be cleaned and disinfected.
6.2 Products used for cleaning and disinfection should be stored separately from food and clearly identified.
6.3 In order to ensure food hygiene, the following clean and disinfected items may be used on food operating tables and warehouses, but after use, they must be rinsed with water. These items include: 1) acetic acid (vinegar); 2) Alcohol (ethanol); 3) Sodium carbonate/potassium carbonate; 4) Bleach (including calcium hypochlorite, chlorine dioxide or sodium hypochlorite, the remaining chlorine content in the washing water on the food counter should meet the requirements of GB5749-2006); 5) Baking soda (sodium bicarbonate); 6) Potassium hydroxide/sodium hydroxide; 7) Hydrogen peroxide; 8) Lime; 9) Natural acids (such as vinegar and lactic acid); 10) Potassium permanganate (solution of no more than 1%) : 11) Soap.
6.4 When verifying the presence of unsealed organic products in the catering site, chemicals should not be used to control harmful organisms, including poison bait boxes.
In both 6.1 and 6.4 mentioned above, the prohibition or restriction on disinfection "in the presence of unsealed organic products" is mentioned. Because there are many people and things in the restaurant, there must be planktons in the air and other environments. If disinfection is not carried out, these microbes will pollute the organic catering food and reduce the hygiene and safety of the food
In the above dilemma, there is an urgent need for an efficient and safe disinfection product, which can not only effectively sterilize the organic restaurants and the processing places of organic catering food, but also will not produce pollution to organic food, and will not cause harm to human health.
